Half a sheep’s head

I had half a sheep’s head for dinner tonight, along with a bowl of tripe soup drizzled with chile oil, garlic and vinegar. Rather intense, and will be followed by some burnt apple crumble. A good thing my digestion is as sturdy as it is. It’s a cool, grey evening so I thought I’d best have a bowl of tripe soup and then reviews of the restaurant suggested that the roasted sheep’s head was very good as well. So I ordered a half-head, and happily (unlike the photos online) it came deconstructed so I didn’t have to disembowel it myself. The meaty bits were quite nice but the brain was rather wasted – I think the Pakistani preparation is my favourite of all those I’ve had. As for the soup, well, I see why it’s a favoured hangover cure.
